Summary / Zusammenfassung The general objectives of the research project are 1)to identify and characterize in hazelnut, celery and prunoideae fruits the major allergens that give rise to symptoms in the clinic, 2) to prepare diagnostic extracts with higher sensitivity and specificity, which will allow new improved diagnostic methods and 3) to improve the ability of the food industry to develop products of reduced allergenic potential.
The task of the Allergy Unit of Zürich is to select patients with real allergic reactions to hazelnut and celery by a sequence determination starting with patient's history, skin tests and double-blind placebo-controlled food challenge (DBPCFC). Furthermore, these patients are tested with new extracts to determine if the new extracts do have a better sensitivity and specificity. Finally the selected patients are retested by DBPCFC with industrially processed food (i.e. celery spice or roasted hazelnuts) in order to define the allergenicity of the processed food.
