Title / Titel (Ballmer-Weber B.) REDALL: Reduced allergenicity of processed foos containing animal allergens

Summary / Zusammenfassung The EU funded project REDALL is aimed at investigating the prevalence and the clinical relevance of allergy to foods of animal origin in Europe. Patients with case histories of an allergy to animal food products are evaluated by skin tests and food challenges which are performed in a double blind placebo controlled way. Challenges start at low doses to determine the threshold level, i.e. the minimal allergy inducing amount of food. To gain such information is important since it will influence political decisions in regard to the
the labelling practice of prepacked food. In the context of the project commercial food
products containing allergens of animal origin which pose a risk fo allergic consumers shall be
identified. Furthermore less allergenic products will be developped by use of various technological procedures during food processing and tolerance of those products will be assessed in allergic patients.

In parallel, the developpment and evaluation of analytical methods for the detection and quantification of allergens in processed food products is a major objective of the project.
Furthermore, more than 40'000 consumers in selected European countries are telefonically
interviewd to get insight into the assumed prevalence of food allergy and into the demands/behaviour of affected consumers.
